Recipe Corner: Energy Bar

Summer is fast approaching, which can only mean that students are now going to be busy traveling around our country and bringing along good snacks isa must. When getting ready for a road trip, it is crucial to prepare a nice snack that will keep well in a hot car or in a backpack, possibly for days at a time. 

For this reason, we here at the Student Paper have compiled a list of pieces of advice to keep in mind when snacks are packed for a trip and a recipe for an energy bar that you can prepare beforehand. 

Things to keep in mind: 

  • It is not a good idea to bring food that melts easily, leaves a lot of crumbs, is oily or has a strong smell. 

  • If you're going to eat behind the wheel, the packaging should be convenient and minimal.

  • It is good to bring along snacks rich in energy and calories to help ease hunger.

    • Trail mix, dried fruits, and oatmeal bars meet these requirements and last for a long time. You can either buy these ready-made or prepare them yourself. 

  • Sandwiches are always a good lunch, but it is best to refrain from using condiments that need to be kept in a cooler if you're going on an extended trip. 

  • Remember to bring lots of drinks.

Energy bar: 

Ingredients: 

  • ¾ cup peanut butter of your choosing. 

  • ½ cup honey

  • 2 tablespoons coconut oil 

  • 1 teaspoon vanilla extract

  • ½ teaspoon sea salt

  • 2 and ¼ cups oatmeal 

  • 1 cup minced almonds and other seeds of your choosing

  • ½ cup minced chocolate or raisins


How to prepare: 

  1. Mix together the peanut butter, honey, and coconut oil in a pot and turn the heat to low until the mix starts boiling. 

    1. Be careful to stir well and lower the heat if the mix starts to burn.

  2. Take the mix off the stove and add the vanilla extract and salt. Mix well. 

  3. Add the rest of the ingredients. If you want to prevent the chocolate from melting, then we recommend waiting to add it until the mix has cooled for 15 minutes. 

  4. Take a baking form (15x30cm) and put baking sheets in the bottom. Spread the mix well in the form. 

  5. Cool the mix for around an hour in the fridge. 

  6. When everything has cooled down, you can remove the mix from the form and cut it into pieces - size is up to you. 

  7. Wrap the pieces in greaseproof paper and bring them on your trip!
